A recipe sits behind each menu item, so the moment a dish is billed its ingredients come off the shelf at that branch. The plate cost is recomputed from what each ingredient costs today — the weighted average of what you actually paid for the stock — so the margin you read is the one you are earning. The inventory dashboard opens on stock value, low and out-of-stock counts, today’s ingredient usage and the month’s waste, with your highest and lowest margin dishes beside them.
